There is a Greek restaurant by where I live, and they make a fabulous lemon chicken soup. I crave this soup at least once a week. Well, yesterday I decided to make it. I’m new to cooking… like truly cooking… but I felt confident that I could do it. I’m so happy I did! Every once in a while I can whip something up that blows even my mind. This was my “mind blown” dish of the year. Seriously. I almost like it better than the original one. Maybe I’m just a little biased. Here’s a little about how I made it!
Boneless chicken (I used thighs)
2 cloves of garlic (chopped)
1/4 Shallot (finely sliced)
Zucchini (finely sliced)
Yellow Fingerling Potatoes (finely sliced)
Salt & Pepper & Parmesan Cheese
Step 1: Preparation/Roasting
I follow a roasted chicken recipe for almost every time I make chicken. Cooking meet isn’t exactly my specialty, so once I found a recipe that even I could do, I stuck with it. The recipe is found here. I pretty much follow it to a tee. However, today I added sliced lemon, shallots, garlic, and fresh dill into the bottom of my baking dish, covered the chicken in butter, salt, and garlic pepper (no cumin like the recipe suggests), and then added more lemon and fresh dill. Next I added my thinly chopped zucchini and fingerling potatoes around the sides. I then cooked it for about 14 minutes.
Step 2: Soup It
After roasting, I removed the chicken from the pan, and put all the veggies and juices into a big soup pot along with more lemon slices, garlic, and fresh chopped dill, salt and pepper. I then added the whole container of chicken stock… I think it’s about 2 cups… maybe 3. I already threw the container away or I’d check har har I brought this all to a boil, then turned it down to just above a simmer for about 15 minutes. While this cooked I made some orzo pasta on the side. -The dish would also be really good with rice.- In the last 5 minutes, I added in the chicken and continued to simmer.
Step 3: Combine and Eat
In a bowl I added the amount of orzo I wanted and then spooned chicken, veggies, and yummy broth. Then season appropriately. Add Parmesan cheese!
